Barbara Costikyan a New York food critic described the cuisine as "sophisticated and exotic". The Frugal Gourmet's (Jeff Smith) depict the food as “delicious” in his TV series and cookbooks. Many other cookbooks featuring Asian cooking have raved about Filipino food; like the Chicken and Pork Adobo, a rich, dark, well-marinated stewed chicken and pork dish, with hint of vinegar and soy sauce marinade (considered the national dish).
